Coconut Rice

Ingredients for 4 adults

  1. Raw rice or Basmati rice 2 cups
  2. Grated coconut- fresh or frozen - 1/2 to 1 cup
  3. Green Chillies 3-4
  4. Mustard 1 teaspoon
  5. Chana Dal 1/2 teaspoon
  6. Salt
  7. Curry leaves - a few chopped 
  8. Peanuts - 1/4 cup
  9. Cashew pieces - a few
  1. Prepare rice using 4 cups of water to 2 cups of rice in a rice cooker.( if you are using pressure cooker see to that the rice is not over cooked)
  2. Pour the rice in a big vessel and using salad spoon or a fork and sift the rice so that each cooked grain stands alone without sticking to each other.
  1. Add a spoon of oil and put the chana dal, peanuts, cashew bits and the mustard seeds. After the mustard seeds splutters add grated coconut, the curry leaves and salt. Saute well.
  2. Pour the cooked rice into the above mix. 
  3. Remove from heat and mix carefully without mashing the rice.
  4. Serve with vadaams or chips or tangy pickles.
