Vegetable Fried rice


Ingredients for 4 adults
  1. Basmati rice 2 cups
  2. Water 4 1/2 cups.
  3. Onion 1
  4. Carrot 2
  5. Beans 10
  6. Cabbage - 1/2 cup finely chopped
  7. Potato 1
  8. Garlic - five cloves - finely chopped
  9. Bay leaves  - 1
  10. Cloves - 2 or 3 pieces
  11. Cinnamon 1 small piece or 1/4 teaspoon powder
  12. Cardamom 1
  13. Ginger Garlic paste 2 teaspoons
  14. Garam Masala powder 1/2 teaspoon
  15. Chilli powder 1/2 teaspoon
  16. Salt
  17. Oil 2 tablespoons 
Pre-preparation:
  1.  Cut all the vegetables into small pieces.
  2. Using a mortar, powder the cardamom, clove.
Preparation: 
  1. Soak rice for 5 minutes
  2. In a non stick pan / kadai or a skillet pour the oil  saute the bay leaf, ground cardamom-clove powder.
  3. Add onion and garlic and fry till onion turns golden brown.
  4. Add garlic paste, garam masala and chilli powder and saute for a few minutes.
  5. Add the vegetables and saute. Add salt.
  6. Drain water thoroughly from the soaked rice and pour it over the sauted vegetable mix.
  7. Using a ladle, mix the rice, the vegetables and  masala thoroughly. 
  8. Add the 4 and 1/2 cups of water.
  9. Transfer the whole thing to the rice cooker and set it to cook.
  10. This should be done in 20 to 30 minutes.
  11. Once it is cooked, stir the cooked rice thoroughly once more and this is now to ready to serve.
Use onion-curd raitha or any vegetable kurma or just chips.
