பீர்கங்காய் துவையல்

  1. Ridge Gourd ( Pirkangai) - 1
  2. Urad Dal - 2 teaspoons
  3. Tomato - 1 (optional)
  4. Red chillies - 3 to 4
  5. Tamarind - marble size or 1/2 teaspoon of Tamarind Paste
  6. Hing a pinch
  7. Coriander leaves - a handful
  8. Salt to taste

  1.  Cut the gourd and the tomato into small pieces.
  2.  In a pan using a spoon of oil fry the chillies, tamarind, hing and the urad dal till the dal becomes  golden brown.Keep aside.          
  3. Using a spoon of oil, now add the cut ridge gourd, coriander leaves and tomato and saute till the ridge gourd gets cooked.
  4. Grind the roasted dal mixture first. Add the sauted vegetables to this and grind to a little coarse consistency.
  5. Remove and serve.
