Vegetable - Mushroom Noodles

- Plain Noodles 1 packet
- Mushroom ( optional)
- Onion 1 large
- Capsicum 1 large
- Carrots 2
- Beans 10 to 15
- Light Soy Sauce 1 teaspoon
- Ajino Motto ( optional) a pinch or 1/2 teaspoon
- White pepper powder 1 teaspoon
Pre-Preparation:
- Heat water in a big vessel.
- Transfer the noodles from the pack.
- Add a few drops of oil in the water ( this will prevent the noodles sticking with each other)
- Once the noodles are cooked, using a strainer, remove water and set aside.
Readying the mushroom: ( optional - some may not like the taste and flavor of mushrooms)
- Cut the tip of the stalks and in a bowl of warm water, wash the mushrooms with a pinch of turmeric powder.
- Slice the mushrooms vertically.
Preparation:
- Cut onion, capsicum, carrots and beans into long thin pieces.
- Pour 2 teaspoons of oil in a skillet (kadai) and saute the vegetables with salt in medium flame.
- Add the soy sauce.
- Add the sliced mushrooms (optional) and saute till all the vegetables and the mushroom are done.( mushroom by nature will exude water. However this will get evaporated as you keep sauteing the vegetables)
- Add a pinch of MSG (Ajino motto).
- Add the noodles and thoroughly mix the noodles with the frying vegetables. Add white pepper.
- Remove from heat and serve hot.
You can use tomato sauce, Chilli Sauce as accompaniments.
