Coconut-Rice vella payasam

தேங்கா நடத்தி அரைச்ச பாயசம்

Coconut-Rice vella payasam ( தேங்கா நடத்தி அரைச்ச பாயசம் ) is not only easy to make but this will also traditionally satisfy many festive occasions.

Ingredients ( for 4 to 6 persons)
  1. Raw rice 1 table spoon ( 1/4 cup )
  2. Grated coconut 1 cup
  3. Jaggery 1 cup ( crushed to pieces )
  4. Boiled Milk 1 cup
  5. Broken Cashew nuts( a few) - roast these in a spoon of ghee.
  6. Cardamom (elakkai) powder 1/4 tsp or a few pods
Pre-preparation 
  1. In a cup of boiling water add the jaggery. Filter the jaggery syrup to remove the dust and debris.
  2. Soak rice in a cup of water for 1 hour.
Preparation:
  1. Grind the soaked rice along with the coconut.
  2. In a non-stick pan or a kadai pour the paste and add 3 cups of water. Boil for 15- 25 minutes.
  3. Keep stirring constantly else this will stick to the vessel if it is a non-stick pan.
  4. Add the filtered jaggery syrup.
  5. Boil for another 10 minutes.
  6. Add the cardamom powder and the roasted cashews. 
  7. Remove from heat. Once it cools down add the milk and stir for thoroughly.
This can be consumed either hot or chilled. Both taste good.
