Beetroot Curd Pachadi
- Beetroot 2 large or 3 medium
- Green Chillies 2 to 3 (finely chopped)
- Fresh curd 1 to 2 cups
- Salt to taste.
- Cut the beets into 2 to 4 pieces and pressure cook them.
- After the cooker cools remove the beets and peel the skins ( The skins will peel of very easily)
- Using a grater, grate the boiled beets into a salad bowl.
- Add the finely chopped green chillies.
- Add the curd, a pinch of salt and mix without mashing the beet.
