Badam Kheer







Ingredients ( to serve 4 to 6)

  1. 25 almonds (badam)
  2. 1 litre (33.4 fl Oz) milk ( preferably NOT toned milk)
  3. 1/2 cup water
  4. 1/2 cup sugar
  5. 1/4 tsp. cardamom powder (optional - sometimes this may suppress the badam flavour)
  6. 5-10 strands saffron, crushed, soaked in 1 tsp. warm milk
  7. A few dry almonds sliced into thin slivers.( you can also add sliced pistachios)

Method
  1. Soak almonds for 30 mins in warm water
  2. Peel the skin of almonds
  3. Grind the almonds into paste with 1/2 cup water
  4. Bring the milk to boil in heavy pan
  5. Add almond paste
  6. Keep stirring occasionally till it thickens.
  7. Add sugar and saffron ( and cardamon if desired)
  8. Cook for 2 minutes in a very low flame / heat
Serve chilled after garnishing with the almond slivers.
